    Description

    mtlD from E.coli which catalyses epimerization of D-Fluctose-6-phosphate to D-mannitol-1-phosphate. Transforming the gene into Saccharomyces　Serevisiae enables to make mannitol, a sugar alcohol which is sweet but not metabolized in human body. Mannitol is also used to raise osmotic pressure in cells under high osmotic stress.
